In this sandwich, eggplant couples beautifully with hummus, lettuce, tomato, and onion to create a scrumptious, satisfying lunch. Eggplant is a good source of dietary fiber and it contains phytonutrients that protect brain cells from damage.

Ingredients
- 4 half-inch slices of eggplant
- 2 tablespoons olive oil
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- 2 teaspoons oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 slices of bread
- hummus
- 2 slices of tomato
- 2 slices of onion
- 2 leaves of lettuce
Instructions
- Sprinkle eggplant slices with salt and let stand for 30 minutes, then pat dry. (If you don't have time, just sprinkle with salt and move to the next step.)
- In a small bowl, stir together about 2 tablespoons of olive oil, paprika, garlic powder, oregano, salt and pepper. Brush each side of the eggplant slices.
- Heat a skillet and cook each eggplant slice for 3-4 minutes per side.
- Spread hummus onto both slices of bread. Top one slice with eggplant, another layer of hummus, tomato, onion, and lettuce. Top with second slice of bread.
- Cut in half & savor!
